Front and center on Chatham Street in Downtown Cary, The Albatross goes beyond a pub with a golf theme. It’s a community hub built on three core pillars: top-tier golf, exceptional food, and creative cocktails. We chatted with owner Paul to learn the story behind the name and discover what makes this unique establishment a destination for golfers and casual patrons alike.

From a Surge in Golf to a Solution in Cary
The inspiration for The Albatross was born from a perfect storm of friendship and opportunity. Paul and his business partner, Sean, have been close friends for nearly a decade, connected through Cary’s vibrant food and beverage scene.
“We witnessed the biggest surge of new golfers the sport has ever seen during COVID,” Paul explains. “At the same time, public courses around the Triangle were being sold or closed, making tee times harder to get and more expensive. We saw simulator golf as the perfect solution for people who love the game but don’t always have 4 to 6 hours to spare.”
Their vision was clear: create a space where the spirit of the game could thrive off the course, accessible to everyone.

More Than Just Simulators: A Reason For Every Patron
So, how do you pitch a place like The Albatross? According to Paul, it’s all about balance.
“To the golf fan, we’re a state-of-the-art golf simulator experience featuring the same Trackman technology used on the PGA Tour, paired with 4K projectors for a premium experience. To the casual visitor, we’re a smashburger restaurant and cocktail bar that just so happens to have incredible golf simulators.”
This three-pillar approach ensures there’s something for everyone. The team put immense care into every detail with their top-tier simulator bays as well as perfecting their smashburger and cocktail recipes.
Must-Try Bites and Sips
For first-timers, Paul has a couple of can’t-miss recommendations.
“Start with either The Classic or The Ace smashburger,” he says. “The Ace was the first burger I created. It features black truffle chili sauce, balsamic caramelized onions, and maple bacon. It’s for the adventurous. If you want something more traditional, The Classic is our take on an Oklahoma-style burger, where we press shaved onions directly into the patty. It’s perfect.”

On the drink menu, two cocktails stand out. Their Transfusion elevates the golf course classic by using fresh fruit and the oleo saccharum method for a bright, vibrant flavor. Another crowd favorite is the Cinnamon Espresso Martini, a rich and spiced twist that has quickly become a signature pour.
A Golf League Entirely Indoors
When asked for a memorable moment since The Albatross’ opening, Paul didn’t hesitate. “Our first Alby Ryder Cup was easily the most memorable moment so far.”
Drawing on their history in recreational sports, Paul and Sean designed a league built on camaraderie with just the right amount of competition. “Competitive enough to matter, but never so serious that a bad round ruined your night. Our first Ryder Cup was proof that we had nailed that balance.”
Today, their league runs year-round with around 30 teams. The season culminates in Championship Sunday, where the top teams qualify for the biannual Alby Ryder Cup, a 27-hole showdown held at Sanford Municipal Golf Course.
For those interested, registration for the fall season will open soon in September.

“It’s all about bragging rights and the opportunity to hoist the Alby Cup trophy. It’s that spirit of connection and friendly competition that we wanted to bring to the community.”
