One of the newish neighbors in downtown is Geluna Gelato, located right in between DiFara Pizza and Hank’s.
We stopped in to meet Diana and Warwick, who met while living in London, were later married, and now own the gelato shop in Cary.
“We decided in 2017 that we wanted to make a change. We were visiting North Carolina to see my parents and we decided to move here and open a gelato shop. We both had traveled all over Europe including many parts of Italy; that combined with inspiration from a shop from Brisbane, Australia (Warrick’s home country) and the idea for our own gelato shop came to life.”
It took a few years to get to where we are today, and during that time Diana and Warwick put in the work.
The couple enrolled in Gelato University, in Italy, and also worked with the owner from the shop in Brisbane and hone their craft. Today, they are making authentic Italian-style gelato in the heart of downtown Cary.
So, what’s the difference between gelato and ice cream?
“The ingredients are similar, if not sometimes completely the same. The difference is in the ratios and fat content, where a good gelato will be between 6-12% fat while a premium ice cream can get up to 25% fat. We also churn our gelato longer than ice cream, which gives it a denser consistency allowing the flavors to shine,” says Diana.
We had to ask what Diana’s favorite flavors are, so that we could give you an inside scoop (pun intended) for your next trip there, but Diana says she loves them all, and rightfully so.
“Honestly, we don’t put out a flavor that we both don’t love. Some of our flavors are inspired by our travels or our family, and that makes those special too,” says Diana.
While they are doing Italian methods, Diana also told us that they have to stick to some of those great central North Carolina flavors.
“When it’s pecan season, you know we’ll be using those too,” says Diana.
As for being one of the newest neighbors to join us downtown, “the community has been fantastic and supportive. Cary is such a diverse town, we love it, and we love hearing people come in and say thank you for being here. We wanted to open up a shop that sold something we love, and we’re glad that everyone is loving it as well.”
